Baked Corned Beef and Cabbage Casserole

ingredients

     
  • 1 wedge(s) (about 12 ounces) leftover cooked cabbage, thinly sliced crosswise (or 1/4 small green cabbge, cored and thinly sliced crosswise)
  • Kosher salt
  • Pepper
  • 2 tablespoon(s) olive oil, plus more for the dish
  • 1 medium onion, chopped
  • 8 ounce(s) leftover sliced or deli corned beef, excess fat discarded, meat thinly sliced crosswise
  • 1 clove(s) garlic, finely chopped
  • 1/2 cup(s) chopped fresh flat-leaf parsley
  • 1 cup(s) heavy cream
  • 1 tablespoon(s) Dijon mustard
  • 1 pound(s) (about 2 medium) russet potatoes, thinly sliced
  • 6 ounce(s) (about 2 cups) Gruyère cheese, coarsely grated
directions
  1. Heat oven to 375 degrees F. If using fresh cabbage, bring a small pot of water to a boil. Add 2 teaspoons salt and the cabbage and cook for 5 minutes; drain and squeeze out any excess moisture.
  2. Heat the oil in a large skillet over medium heat. Add the onion and 1/4 teaspoon each salt and pepper and cook, covered, stirring occasionally, until tender, 8 to 10 minutes. Add the corned beef and garlic and cook, stirring occasionally, for 4 minutes. Remove from heat and fold in the cabbage and parsley.
  3. Coat a deep 8- by 8-inch square baking dish with oil. In a bowl, whisk together the heavy cream and mustard.
  4. Lay a third of the potatoes in the baking dish, slightly overlapping them. Top with a third of the corned beef and cabbage mixture (about 1 cup) and sprinkle with a third of the cheese (about 1/3 cup); repeat once. Top with a last layer of potatoes and cabbage mixture. Pour the cream mixture into the dish.
  5. Cover the baking dish with foil, place on a rimmed baking sheet and bake for 45 minutes. Uncover, sprinkle with the remaining cheese, and bake until the potatoes are tender and the top is golden brown, 25 to 30 minutes more. Let rest for 10 minutes before serving.

My mother-in-law made this for brunch a few Sundays ago. It was delicious. So, if you celebrated St. Patrick's Day and have a ton of Corned Beef and Cabbage leftover, give this recipe a try. Enjoy!

The Broken Leg

When our 8  year old, AJ, unexpectedly broke his left leg skiing last month, I had to adjust and learn different ways of doing things that were so normal for us before. Life had to happen at a different pace and maybe in a different way. Many lessons were learned.

Lessons learned from AJ's broken leg:

Husbands are the best. I don't know how I would have managed without Gregg. I am thankful I didn't have to-he was there when the accident happened and he is still AJ's biggest fan-pushing him ( not literally) and loving him and carrying him and just being his dad.

It's good to have siblings to distract you. When AJ was having a rough day early on, all it would take was his big brother or sister to crack a joke, and a smile would finally appear.

Someone is always, always worse off than we are.  Just walk into an Ortho waiting room on any given day and you can honestly tell your sad 8 year old-Things aren't as bad as they seem or feel right now.

Never take walking, sitting, running for granted. Exercise really isn't from the devil. I wish AJ could be running and jumping with his friends. So does he.

AJ and I enjoy homeschooling a little too much.

Lots of closets get organized when you are homebound with an injured child.

Lots of cookies get baked too. :)

Little boys in wheelchairs are adorable.

Stairs are so daunting when you are on crutches.

Praying does calm you. AJ and I prayed a lot the first few weeks when his pain was practically unbearable. There was nothing else we could do. God is good. He will heal and strengthen AJ in His time.
