Popcorn Salad-I know, right? Mrs. Nanette Pullmann brought it to a recent BBQ at our house. It was delicious. I was hooked. Side note: Nanette usually buys already popped popcorn in the chip aisle, but you certainly could pop your own. Try it, soon! But beware, it feeds an army.
1 and 1/2 lbs. bacon, fried, drained and crumbled
1 large red onion, chopped (Vidalia Onions would be awesome in this.)
2 Heaping cups chopped celery
2 (8-oz.) cans sliced water chestnuts, drained
30 Cups Popped Corn
4 Cups Shredded Cheddar Cheese
1 1/2 Cups Real Mayonnaise
Mix bacon, onion, celery and chestnuts together in a LARGE bowl. When ready to serve, add popped corn and cheese. Stir. Add mayonnaise, stir and serve immediately. Enjoy!
